Cooking Demos

Once you have visited the Food and Drink Producers market on the West Pier, why not wander over to the Harbour beach (opposite The Sloop Inn) where talented Cornish Chef’s will be delivering cooking demonstrations using some of the county’s finest ingredients.

Watch these talented chefs at work and pick up copies of the recipes they will be producing. The demonstrations will take place on the harbour beach at 2pm, 3pm and 4pm on both days.

We will be revealing more about our chefs in the coming weeks, so make sure you come back to see who will be in action.

SATURDAY, 21st MAY

COOKING DEMONSTRATIONS

2pm - Aaron Bailey, St Andrew's Bistro
Stuffed Crispy Courgette Flowers with Buffalo Mozzarella, Tomatoes and Basil

Aaron joined St Andrew’s Street Bistro in February of this year. Before that he spent fives years as Head Chef at award winning Noosa Waterfront Restaurant and Berardos Bistro, both in Queensland, Australia. Prior to that and no stranger to St Ives, Aaron was second chef at Porthminster Beach Café for four years.

Aaron takes pride in making all of his own staples like bread, cakes, pasta, sweet and savoury biscuits and ice cream.

St Andrew's Street bistro has re-opened under the new ownership of Martin and Jacky Potter with the promise of delivering St Ives a 'contemporary bistro' with unashamed Italian influences.

Perfect for casual dining, the goal at St Andrew's Street Bistro is to combine fabulous food, friendly staff and a relaxed, laid back atmosphere with funky bohemian decor.

With a passion for food and having joined forces with renowned head chef, Aaron Bailey, St Andrew's Street Bistro offers an ever changing menu using the best produce available each day with as much as possible sourced locally.


3pm - Scott Young, Tregenna Castle Hotel

Set in 72 acres of private grounds, Tregenna Castle has panoramic views of St.Ives. It is a beautiful hotel rich in character and offers the rare opportunity to stay in a Cornish castle, as well as enjoying a range of leisure facilities, open to local residents as well as guests. 4pm - Lee Groves, Seagrass
A Taste of Seagrass (Something from the sea and something from the grass!)

Lee Groves was the Masterchef Semifinalist of the Professionals version of the programme in 2010.

His success in the television series marked an about-turn for him, admitting he had fallen out of love with cooking until the BBC series helped revitalise him bringing back his hunger and passion for culinary perfection using the finest local produce Cornwall has to offer.

He is now head chef at St Ives Restaurant Seagrass - a new stylish restaurant in the heart of St Ives where the emphasis will be on using seasonal, local produce to create some amazing foods to excite the palate and the eye!

The menu is ever evolving to use the best of what there is out there, offering some classic dishes but with a modern twist.

2pm - Dan Foster, Porthgwidden Beach Café
Local grown Tregassow farm asparagus served with a lemon and chive potato rosti, hard boiled quail eggs, lizard leaf leaves and maltaise sauce.

Dan Foster is Junior Soux Chef and has been with Porthgwidden Beach Cafe for the past three seasons.

Local to St Ives, Dan has been cooking since the age of sixteen and has previously worked at The Potherminster Hotel, Onshore and Sheaf of Wheat.

Nestled beneath the steep grassy slopes of St Ives “Island”, right on the beach with unbeatable and uninterrupted views across St Ives Bay to Godrevy Lighthouse. Porthgwidden Beach Café is now open all year round for breakfast, lunch, afternoon tea and dinner.

The atmosphere is relaxed and friendly. The café specialises in Mediterranean and Asian seafood cuisine with each recipe inspired by Head Chef Ryan Venning - an oasis of taste and visual beauty. The café is open daily for a selection of patisserie and the finest ground Italian coffee from Lavazza.

3pm - Paul Learney, Seafood Cafe
Butter Poached Lobster Bourguignon

Head Chef Paul Learney grew up in Winchester where after working part time at Lainston House Hotel he chose a career in catering.

He spent his apprentice years at the famed Hotel du Vin, Winchester, then moved on to work at the officer’s mess of the AGC at Worthy Down, Winchester.

Deciding to leave the kitchen to study food chemistry at Bournemouth University he was soon drawn back, after completing his degree, and moved to London to work as junior sous chef at City Rhodes, progressing to sous chef at Tower 42, working for Roux Associates & finally as Head chef at The Crown, a gastro pub in Islington.

Eight years later he moved to The New Forest to work for Red Herring Events and then spent two years working all over the country & Europe.

Three years ago Paul and his partner Joanna came to St Ives for a weekend and decided they couldn’t possibly live anywhere else.

The Seafood cafe offers a new concept in dining. Each day, we have a selection of fresh local fish & shellfish, prime Cornish meats & free range poultry. You simply make your choice from our refrigerated display cabinets, tell us how you would like it cooked, then add your choice of sauce, potatoes, salad & vegetables.


4pm - Lee Wilson, Porthminster Cafe
Summer Pims Re Worked

Lee Wilson worked at Porthminster Beach Cafe for the seasons of 2008/2009 before relocating to York where he became the Sous Chef for a local prestigious restaurant, J. Bakers.

After honing his skills in a different restaurant he now returns bringing with him a new dynamic.
